Source / Processing / Story:
Embedded within the famous Colombian “Eje Cafetero” (coffee axis) in the Risaralda department you will find the beautiful town of Marsella, famous for its colonial church and classical houses. The Hacienda Horizontes is only a couple of minutes away from Marsella.
The story of the Hacienda starts almost 100 years ago. Doña Emma and Don Alberto Zapata recovered the farm from a family bankruptcy. They worked hard to buy back more than 300ha in order to rebuild the coffee farm. Their daughters Lucy and Cielo have been taught all about coffee from their parents. However, Lucy and her husband reinvented the way of managing coffee plantations after their father passed away in 2007. They introduced very modern farming management methods and work in a very sustainable way without compromising on social, ecological and environmental issues. Today the family owns more than 600ha of land and developed a small roasting business delivering roasted coffee to the local market.
The wet process on the Hacienda Horizontes removes the cherry skin from the bean by using the traditional “despulpadora” machine and leaving the honey (mucilage) for a natural fermentation. After that the coffee is fully washed in order to assure the coffee keeps all its main cup qualities. Afterwards the coffee is dried on the farm.
