In the mid-19th Century inhabitants of the Central Valley migrated to the southwestern region named Tarrazú, also known today as region of the Saints. This region owes its name to the fact that its cantons were named after saints: San Pablo de León Cortés, San Marcos de Tarrazú and Santa Maria de Dota. Protected by the Pacific basin range, this region is a sanctuary of mystical birds and forests. Characterized by a large biodiversity, micro-climates and rich volcanic, acidic soils of primarily sedimentary origin, the region is famous for producing one of the best highland coffees in the world. The majority of the plantations are shaded with native trees. The harvesting period lasts five months from November to March. It coincides with the well-defined dry season which offers uniform ripeness and a high quality coffee cherry. The dry season also enables the constant use of the sunshine for adequate patio drying. The cultivation of coffee is fundamental to the socio-economic growth of Los Santos. A total of 22.000ha are planted, each composed of small farms measuring an average size of 2,5ha. A big part of the employees lives in homes located at the property that have been constructed for them. Working together with the famers and partners in a complementary and sustainable way, the impact on the surrounding environment and the conservation of natural resources is reduced to a minimum.
